Vegetarian & Vegan Black Bean Enchilada Pie

Recipe Ingredients
9 corn tortillas
16 oz. jar salsa
1 lb. can black beans, drained
1 lb. can corn, drained
1 tsp. ground cumin
1 med. zuchinni, grated
1.5 c. shredded cheddar cheese



Recipe Directions
Preheat oven to 350 F. In saucepan, combine beans, corn, salsa, zuchinni, and cumin. Heat and simmer for 5-10 minutes.
Spray a 10 inch square baking dish with cooking spray. Put a layer of tortillas in the bottom of the dish. (Cut tortillas if needed.) Add 1/3 of the bean mixture, then 1/3 of the cheese. Repeat layers twice more.
Bake at 350 until edges bubble, about 35-45 minutes.
